Moon Harvest - Shiraz

Tasting Notes

Deep vibrant red with purple hues. Bouquet hints at plum, cassis, blueberry, perfume, and peppers with a touch of lavender underneath.

Palate has rich dark red berry fruity character with complex spiciness. Tannins are soft and the wine is medium bodied with subtle oak characters.

There is a lifted clean sweet fruity finish.

Winemaker Notes

The fruit for this wine was sourced from premium vineyards across South Australia. Picked for their characteristics, each parcel of fruit displayed individual components unseen in other patches.

Shiraz grapes were crushed and de-stemmed to fermenters. The individual vineyard parcels were fermented separately in static and rotary fermenters.

The wine was pressed off to stainless steel tanks and allowed to settle. Post MLF the wines were clarified, SO2 added and cold stabilised.

Moon Harvest - Chardonnay

Tasting Notes

Pale straw with green hues.

The nose shows strong characters of nectarine, peach and melon with a hint of cinnamon.

The palate is medium to full bodied showing stone fruit up front with a long finish of lingering fruit and spice.

Winemaker Notes

The fruit for this wine was harvested at night to enhance the flavour found when the grapes are at their premium, and to reduce oxidation.

They were crushed, chilled and then pressed using a membrane press and clarified. The wine was fermented over a period of 20 days at cool temperatures (31-15C) to enhance varietal flavours.

The individual parcels were then blended to style, balancing the fruit with a hint of oak, giving the wine length, and fine-tuning the acid structure.

Moon Harvest - Shiraz
Moon Harvest - Rose

Tasting Notes

Crisp and refreshing, the 2010 Rosé offers an array of fresh cherry, red apple skin with blackcurrant and citrus flavours. The palate is balanced giving a crisp tartness, and a long mouth-watering finish.

Winemaker Notes

2011 was a standout for fruit dominant varietals such as this Rosé. Cooler weather and light rains in Spring were great for aromatic varietal expression and allowed for longer than usual maturation resulting in a mid-March harvest.

Fruit was harvested when they expressed the light, bright berry fruit flavours needed for Rosé. After 24 hours on the skins, the wine was settled and fermented like a white wine, to ensure maximum appeal

Our Storytop of page

Harvesting our fruit at night for that extra secret ingredient - you can't quite put your finger on.

As dusk falls over the land and the rest of the world make plans for bed, the workers prepare for harvest. The perfect night is upon us, all the conditions are right; from the development of the grapes to the weather.

Midnight approaches and the evening skies fill with the headlights from the harvesters as they travel across the vineyard. A light chatter of expectation can be heard in the breeze.

We harvest the fruit at night as the cooler temperatures protect the fragile berries at the critical picking stage; reducing the oxidation and loss of the full aromatic qualities in the wine. The fruit remains unscathed from potential grape skin damage which can cause maceration and colouring of the juice. The cool night time temperatures delay fermentation, allowing more time to deliver the fruit to a controlled environment.

The fermentation process only starts once the grapes reach the winery, where they are under the expert supervision of the winemaker.
